Desperate Dinner Breakfast Burrito

1. Pierce potato skin with fork and roast for 45-60 min at 400F. Quarter and remove skin.
2. Cook bacon until crispy. Set aside to drain. Cook peppers and onion in bacon fat in the same pan over medium heat until tender and slightly golden. Season with a pinch of salt.
3. Heat butter and scramble eggs to desired consistency. Add salt to taste. (I add a splash of water to eggs before scrambling for texture. Milk or cream works too.)
4. Heat tortillas in the microwave for 30 seconds to soften. Layer with smashed avocado, half the eggs, 2 sweet potato wedges, 2 bacon strips, arugula, and cheese. Wrap tightly.
5. Sear tortilla, seam side down first, in a greased skillet over medium heat (oil or butter). Exterior should be golden brown and just crispy.
