APPLE BOURBON COBBLER

For the apple cobbler:

1. Preheat oven to 350°F.
2. Peel and chop apples into small chunks, discarding the core.
3. Combine apples, lemon juice, brown sugar, Larceny Bourbon, ground cinnamon, ground ginger, and vanilla extract in bowl. Mix until apples are fully coated. Place in a 9-10 inch cast iron skillet or 8x8 baking dish. Smooth to fill the bottom of the skillet/dish.
4. Combine flour, sugar, and baking powder in a medium bowl and mix. Stir in melted butter, milk, and vanilla extract. Mix until fully incorporated.
5. Pour the batter over the top of the apple mix and smooth with a rubber spatula. It does not need to be perfectly covered. Bake for 35-40 minutes or until top of cobbler is just starting to appear golden.
6. Top with vanilla ice cream and a drizzle of bourbon glaze. Serve immediately.

For the bourbon glaze:

1. Melt the butter in small saucepan over medium heat. Whisk in sugar, cream, Larceny Bourbon, and salt. Simmer until thickened, whisking to prevent burning, about 2-3 minutes. Let cool slightly before topping. The sauce will thicken as it cools.
